A bit surreal to actually make it here. Perfect in its simplicity and one of my favorite days of 2019.

  • Chorizo
  • Spring mushrooms cracker
  • Buffalo fresh cheese
  • Caviar & butter goat’s milk
  • White tuna belly & tomato
  • Goose barnacles
  • Prawns of paramos
  • Pod razor & saltwater clam sauce
  • Lobster
  • Cod kokotxa, swim bladder & pil pil
  • Egg yolk & cantharellus
  • Peas & it’s juice
  • Red Sea bream & vegetables
  • Beef chop
  • Curd ice cream & cherry juice
  • Elderflower & blueberries
